Happy Fiesta Mt. Carmel

Our co teacher is absent today because she had to take care of their visitors at home for the Feast of Mt. Carmel in Carmen, Cagayan de Oro City. We could not go there because we have classes, so instead of waiting for the entire department to go, she sent the food to our office.. 









They were all yummy.. Happy Fiesta Mt. Carmel.. Thank you Mama Nitz..

Cheesy Tomato Omelette

Here is what the kids had for their breakfast this morning.. with rice and milk.. Thanks to my sister Sweet for preparing this for the kids.. They love it.. 


It is very easy to prepare, just get 2 eggs, 1 ripe tomato and cheese.. Spices and salt to taste. First cook the eggs then put them on top, tomato first then the cheese.. no folding, and not letting the eggs dry out.. 

Here's mine.. My yummy Chocolate Smoothie..

Pizza Bread: Hotdogs and Eggplant



So the kids wanted pizza at a very early morning.. No deliveries, so we had to make our own. No time to make the dough. Good thing we have a loaf of bread which we used as base. 


We also have a packet of pizza sauce left and a little block of Parmesan cheese left, so it's perfect.. Hahaha.. Grated some, sliced the hotdogs and an eggplant, readied the bread slices, preheated the oven. In just a few minutes we were done. The layering of bread, pizza sauce, hotdogs and eggplant and cheese was very easy.. baking took only less than 10 minutes.. 

Kids verddict? Nom nom nom.. yay! :-)

No Pork Pansit

So we no longer cook with pork. The healthier choice, really. And all recipes from the past have been tweaked to make a better, healthier version, without using pork as one of the ingredients. For lunch today, mother cooked Pansit using leftover fish flakes, shrimps and chicken meat and liver. 


The verdict is of course, nom nom nom.. minus the fat..

Baked Spicy Chicken and Steamed Okra

I decided to bring my lunch to school today. I have Baked Spicy Chicken filet and steamed okra. It's actually a simply, easy to prepare dish that served as my main meal since I am highly into the protein diet. 

A serving of chicken with the size of a palm each, that adds so much to my protein need for the day.. Calorie wise, this meal is only 700 calories. 

How to prepare? All you need are chicken fillet, soy sauce and spices that includes cayenne pepper, basil, black pepper, thyme, Spanish paprika and oregano. Mix everything and bake. Remove from oven when done, and serve with steamed okra with vinegar and patis sauce.. That's it.. Yum yum..

Happy Birthday Sir Gerry

My co-teacher's birthday is today, but he will not be around for some important reasons. Last Friday, we had a mini celebration at the office and this is what he brought. This is called Balbacua, adobo style. This is very spicy and everyone loved it. I got to taste a bite or two just to taste his treat, otherwise the birthday celebrant might get offended.. As the saying goes, to refuse an offer is an insult.


Anyway, happy happy birthday Sir Gerry. Enjoy..

Bibingka Mania

I was looking for a ride last night after buying wreath from one of the stalls of flower shops near St. Augustine Cathedral when I chanced upon this quaint and charming food place that sells Bibingka.. I love bibingka, so I bought one for P 50 only, not for me, but for my family to try. 


Bibingka Manila is actually selling Manila/Luzon style bibingka with salted eggs. The last time I was able to eat some was when I was still living there for work related reasons.. It was good. So I was also excited to taste some of the Bibingka I bought. 



We were scheduled to go home to our parents for the weekend so it is but timely to enjoy this treat.. It was past dinnertime when we tasted the treat. Of course, it was good. Will buy some more next time..

The Kids' Summer Recital

It's that time of the year again when the kids are done with their summer lessons and ends it with a recital. River on the Piano, and Lili with her violin. We were very happy with their duet number. 


They were very excited. I was even happier with Lili's solo performance. And when it was time to eat, here is what we had.. 


Early dinner which is reminiscent of their LSC days. hehehe.. Love the chicken and bread from Grand Caprice.
