On a warm evening, what better way to cap the night than to indulge in ice cream...
It's the newest flavor from Selecta Blasts! It's Mrs. Fields Chocolate Chip Cookie Ice cream, and it is oh so yummy!

Creole Chicken Spaghetti
I guess you could say that I am addicted to Creole seasoning on my chicken.. hehehe.. From what we have cooked previously, I have imagined another way of cooking our spaghetti at home..
So in the same manner, I have rubbed creole seasoning on my chicken, fried them and sliced them to bits.. I used chicken breast so that we have lots of meat at equal bits and pieces when sliced..
Took the same instinctive procedures of removing the chicken, sweating the onions, green onions and the garlic, and adding the sliced chicken back, sauteing them and added a little pineapple juice, and some Angel KremQueso... just a little of the last two ingredients that were added.. And just when my pasta was al dente (cooked firm but not hard), turned the stove off and transferred the pasta to the sauce mixture while it has still been cooking.. Turned the stove off and continued mixing until all sauce is mixed with the pasta. Added cheese flakes and served the yummy dish..
It was so good that by 2 in the morning, the only pasta left is this:
When we have pasta dinners, we usually end up having a brunch of pasta the next day--- But lo and behold, our 3/4 kilo pasta disappeared so quickly with the creole chicken.. Oh well, next time we'll do another pasta experiment, I hope it will have the same effect to the pasta eaters at home..

Yesterday, we did our marketing for our commercial cooking class in the morning because we forgot to do it two days ago. We were busy with so many things, especially my clearance at school. It was actually good because SaveMore have come up with their new promos for the month, and you know me, I am a sucker for promos.. hehehe...
For our loot at home, I was supposed to buy only two cans of Pineapple juice, but look what I included. A box of Magnum, for the three kids who are together this summer. They have had Cornetto, Crazy Banana and all other cool treats in the previous days, and yesterday, they had Magnum because I saw that for SMAC holders, one box of Magnum will give you a free Magnum Chocolate and Strawberry/Chocolate Brownie.
Now, to justtify my equation, 1 box + 1 free magnum= 4 Magnum.. For budget conscious moms, that will save you P 55.00 already as you get 4 for the price of 3 less 5.00, (P 145 instead of P 150 as each costs P 50) hahaha.. Today's commercial cooking class requires us to make Creole Seasoning for the chicken rub on our chicken, to be used in cooking Jambalaya...

Alberto's Pizza for Dinner

Lili wanted to go out, but I was too tired to go out with her, so instead, I bargained for whatever she desired. She said she wants pizza, and gave me the number of Alberto's Pizza that was saved in my other phone. So we ordered Meaty Royal and Full House, two of her favorites from Alberto's...
That saved me from cooking dinner, as the order arrived in time for dinner.. The riders of this pizza company seem to be wearing maha batteries that they always deliver on time.. I just love them that way..

Reheating the Lechon
On March 17 this year, we celebrated my parents' wedding anniversary at the beach. The lechon was my share in this affair, as well as some of the other goodies and junk foods. Since the lechon was huge, and there were just a few people who joined us at the beach, my mom packed us a whole huge bring home of the lechon, that is more than five kilos. Since we were drunk with all the lechon that day, we simply kept our share in the freezer. Since March 17 until today, whenever we feel like eating lechon, all we have to do is reheat the lechon according to our lechon craving..
Today, I unpacked the last of our lechon loot and had it reheated over the stove through a kawali. A little oil so the meat won't stick to the pan, and I simply allow the frozen meat to thaw, and get crispy.
The problem is that this portion is huge, so I had to slice the meat whenever I can, and have each slice fry unto the oil.. You could say that this is way too unhealthy, but, it sure worked.. It's lechon goodness all over again.. Just in time for the start of Holy Week, where we won't be eating meat (????) for a week...
