7 Kilos of Mangoes

Before leaving this morning, three more kilos of mangoes were delivered by the neighbor who sells them. They are not ripe yet, but we are hoping that they will soon ripen for the mango float and all other mango recipes in mind. 


Some of them will be sold at the store too. hahaha.. Imagine 7 kilos for consumption of not sold..

Spanish Style Tuna and Mackerel

This is one recipe that I always want to perfect. My father's recipe for Spanish Style Tuna and Mackerel. 


The ingredients are simple, and minimal. The process is really very easy. The secret is reheating the lot every morning to soften the bones, and for the flavor to sip in. On the 8th day, you will have a really yummy Spanish Style Tuna or Mackerel. 


Ingredients:

1 kilo Tuna/Mackerel
Oregano
Whole Peppercorns
Vegetable oil
salt
laurel or bayleaf
pepper
water

Process:

Simply clean your fish, and slice according to desired size. In a pot, place your fish, salt, laurel or bayleaf, pepper, peppercorns, oregano, water and oil. Simmer. 

Daily bring the lot to a boil for at least 3 days. Adding water and all other spices if you must.

Peanuts on their Spaghetti..



My Lili put grease-less peanuts on her spaghetti, and her little cousin followed suit. The spaghetti was cooked according to how they liked it-- sweet and cheesy, with lots of hot dogs and beef. I didn't expect that peanuts can make it more exciting. 


I tasted their new discovery and well, I must tell you that it isn't bad at all. In fact, the crunch and the nutty taste of peanuts make it more tasty. I guess this is their way of telling that Spaghetti needed to be presented differently each time. Over the weekend we cooked spaghetti for them and today, since it's another holiday, it's spaghetti by request day again. These kids do not tire of spaghetti, but then I guess they do not know that they actually want variety.. On Saturday, I will not cook any spaghetti for them, I am the one tired of spaghetti.. We'll have something else.. That's for sure..

Griller made from Scraps of Metal and Iron


It's a holiday. My brother arrived last night a few minutes after we did. So this morning, we are all here at my parents except for another sibling who is in Singapore for her studies. We cleaned the house today, while my father and brothers took care of the back of the house. There were so many scraps left by our carpenters after the second and third floor extensions were built. Then my brother said that we should have grilled food today. My mom said we should first buy a new grill. But what my brother did was amazing.



He gathered a few scraps and turned them into the grill above. He got some charcoal from our store, and voila! We bought fresh fish, some meat and chicken and the grilling started.

Chicken Heart Love

All of us love Chicken Heart especially when it is cooked this way. Chicken Liver Guisado, which always come with the Chicken heart. Of course, chicken liver and heart can also be cooked in your pansit and all vegetable recipes, if desired. 


To some people, eating Chicken liver is a good thing. But for the health conscious, it is often said that innards of whatever animal is bad, and Chicken liver and heart is not an exemption. Hmmm.. It goes with what you believe in, and sometimes, it is a cultural thing too.

Balls from Milo

We just had the Milo Olympics and our school was really very busy last week and over the weekend that passed. We bagged the Champion title in Saludo, 3rd Place in Cheer Dance Competition, and 2nd runner up in Ms. Milo. 


When my mom came home after doing the weekend groceries, we were delighted at her loot. She bought this Spalding Soccer ball for my baby brother and the good news is, one can get it for only P 250 with the purchase of a kilo of Milo Drink. The kids love Milo so it was definitely a good buy. Other balls are also available, Basketball and Volley Ball.

Balut


Andrew Zimmerman made a great feature about Balut and all other exotic foods in the Philippines on Bizarre Foods. And I would like to thank him for it. From that video on you tube, a lot more came and I am quite happy that Balut now has international following. 


Our trainer at one of the contact centers I worked with was an American who we introduced Balut to, but he never wanted a bite. Well, we respected his disgust to the food, but now I am seeing a lot of foreigners getting hooked with Balut. 

Others featured Balut and even came up with a challenge for their friends and colleagues. Here's another video, and this time, on how to eat Balut.


From the video above, I am amazed that Balut can now be available abroad.. Wow.. Maharlika serves Balut, and it's no longer a street food there.. Yay :-)

Can't Get Rid of Hotdogs?

Everytime we come home on weekends, my niece would always ask anyone of us to cook her favorite Spaghetti. She can live on Spaghetti and the funny thing is, she can not get enough of it. That is, if the Spaghetti has her favorite Hotdogs. 

We have erased hotdogs in the grocery list already, but sometimes, when kids request to have some, we give in, because it is not always that we give them hotdogs anymore. Unlike before that it was a staple.


So during the weekend, we gave in to Ira's requests, and hotdogs on their Spaghetti is just one of them. She wanted a cheesy sweet Spaghetti with lots of hotdogs, but I only placed a few and added more beef and cheese. 


So there.. Spaghetti with hotdogs, cheese and beef. A happy childhood in a bowl, hahahaha..

Above is the yummy Ginataang Bamboo Shoots with Malunggay and Dried Fish. So tempting.. Best partner is the fried fish that we always love to eat.. I was salivating as I prepared Lili's plate.. 


But no, GATA or coconut milk is not allowed in my program. So I only had fish and 1/2 cup rice..

And off They Went..

Today, during their Araling Panlipunan and Filipino time, the kids will have their exam on Kasuotang Pinoy and Pinoy Fiesta where they have to bring original Filipino foods... 


These are just part of their presentation.. Below are 'Kutsinta' with no coconut anymore, as well as 'Binaki" , a corn based treat similar to the Mexican Tamale but not quite the same, is originally Pinoy. Their group-mates will also bring other foods.. 


But I wonder if the food will be ALL-Filipino as in the previous years, some of their classmates brought food that are Italian, Chinese and even American in origin.. 

Anyway, the rest of the kakanin I bought, well, they are on our table--- hahahaha.. 


 Especially the Cassava Suman...


But the Puto Maya is gone.. hehehehe

Preparing for Linggo ng Wika 2014 Culmination



Nothing fancy. Where would you go to buy kakanin on a very busy day? Of course, the market-- Cogon Market has lots of kakanin sold as early as 4 am till the afternoon. We used to have a suki who sells Puto to this reputable cafe and at first we didn't know that the puto came from our suki until we finally tasted no difference, but the price. hehehe.. So after that, we go to her directly as it is cheaper to buy Puto from her.. 

Unfortunately, my suki was not around today. Or maybe she was late. So I had to choose among the other  displayed goodies.. 


But then again, I had to stand by what was asked for the kids to bring.. 


Although I really couldn't help but notice a lot of them to choose from, all from friendly peddlers.. 


This one is my mom's favorite as well as my sister's so I had to buy some.. 


And before leaving with my loot, I had to take pictures so that next time I drop by, I would not get lost. Cogon Market has grown so much that it looks more of a maze than a market.. hahahaha


Here are the kakanin I bought.. and they are simply under a hundred pesos.. 


What's next is to arrange them according to how they will be displayed..

Another Spaghetti Recipe

The other day, Lili requested for Spaghetti but we didn't have any pasta so we had to buy the ingredients yesterday, I cooked the requested dish for today's. It was Chicken, Mushrooms, ground chicken and vege-meat that I used so it is much healthier. The carbohydrates from the pasta plus the protein in the sauce makes it all different. 


Before the mushrooms could be sliced, they had to be soaked in water to make them soft-- changing the water many times to remove the odor and to ensure that the mushrooms is clean before using. In same manner, the vege-meat had to be soaked with water and ensure that water is also changed many times.

I used three medium sized tomatoes, one medium sized bell pepper, a clove of garlic and one head onion. Tomotoes and bell pepper cubed, while garlic and onion finely chopped. For spices, I used Thyme, Oregano and Basil. The pasta we cooked was just 400 grams, and the pack of sweet sauce came with it already. 

In a carajay, I sauteed the garlic, onions, bell pepper and tomatoes in a small amount of oil, followed by the ground chicken, sliced mushrooms and vege-meat. A cup of finely grated Parmesan cheese was added, then the sweet sauce. When the sauce was almost cooked, I added grated Cheddar Cheese. Then the boiled pasta (aldente), was added to the sauce, thereby adding more Parmesan and Cheddar cheeses.. 


Of course, the best part is tasting them.. I prefer eating without the Cheese topping since the Spaghetti is already cheesy, but my companions at home prefer added cheese toppings.. 


So that was lunch.. Yum Yum..

Look what I got? My bff Gay came from Bukidnon where her sister makes this really yummy and healthy Calamasi Juice concentrate which can make 4-5 litters of juice, and no need to add sugar as it is already sweetened. 

The first time I tried their Calamansi Juice concentrate, it was plain and not sweetened, here's another variant of their calamansi juice concentrate. This is Cagayan de Oro's answer to that which we brought from Molave, which was quite good too. 

Anyway, the most exciting part of the token from Gagay are her Polvoron. Freshly baked and oh so yummy. They have been our favorite treat since high school, and when they would make, we always get a pack, Darlene and I, hehehe.. Oh and that time, they just make for give away.. Now, I am hoping my bff would be making this Polvoron as a business, as they are much yummier than those from Goldilocks.. I swear :-)

Poor Gator :-(



I saw this video on you tube and I wonder how they caught the gator.. Hmm.. My sister and I were in a Crocodile shop/farm in Singapore in 2010 and they have a tannery just right behind it but we never saw how the process of removing the hide was done.. 

After seeing this video, I feel pity for the animal.. tsk.. On the other hand, I wonder how this gator would taste when cooked.. hmmm..
