Preparing for Lunch, Remembering and Blessings

Here is what my sister is cooking for lunch.. These Tahong and Fish recipes remind me the time Lili just arrived into this world.. 


Tahong or Mussels are rich in vitamins and minerals and helps mommies to have more milk for the baby.. 


So does this fish recipe.. 


Remember the watermelon in my previous post? The men hired by my father cleared the front lawn and the watermelon's roots came with the clearing. We had no choice but to harvest it. We were surprised to see that it was ripe already, today.  It just grew.. we didn't plant it, and now we shall have watermelon for dessert.. Blessings do come in so many forms, small or big, they are worthy of gratitude..

It Just Grew..


We were on our way yesterday to school and while my father was maneuvering the car to a halt, this is what caught our eyes.. Watermelon growing in our front lawn. We didn't plant it there, it just grew? How? Hmmm.. My mom said that probably someone ate watermelon and spew the seeds there, and it grew. Rain and sunshine fed it, but not us. Thus, we consider it a blessing. 


I shared the photo I took with my co teachers and one of them said that it was a sign for good things to come. Good luck is what it is meant. If that is so, then I accept that explanation, hehehe..

From Lechon to Bamboo Shoots

My friend's mom, after much conversations with her on the phone during the week-long confinement of my friend at the hospital, sent me this huge container full of  Lechon from yesterday's fiesta celebration. I didn't know what to say, but thanked her for this. I mean, I didn't expect anything in return for comforting her and calming her during the nights she would call about my friend's sickness. 


Anyway, as I do not eat pork much these days, I gave the Lechon to my sister, who cooked part of the Lechon into some Bamboo Shoots dish.. 


The other half was baked to reheat the Lechon. Of course, the Bamboo Shoots dish with the Lechon slices was yummy..  You can still taste the Lechon there, but the dish isn't that overpowering anymore.. When I arrived home, it was tempting to eat.. hahaha.. I tasted it to be able to blog about it.. Just a taste.. :-)

Happy Fiesta Cagayan de Oro

While Cagayan de Oro City celebrates the Feast of St. Augustine today, we here in Opol are just having a simple family time as I do my take home work in preparation to tomorrow's release of report cards in school. 

Anyway, as usual, Spaghetti is the prime request of the kids.. They never tire of our Spaghetti at home, perhaps because each time we cook Spaghetti, the recipe is different but still yummy.


Then there is the unforgiving HUMBA.. ughhh.. Father says it is for the mood of the fiest in CDO, lol.. It is yummy alright, but somehow we had to be careful of the pork fat.. 


Then there is this Maja Blanca with no coconut milk.. Healthier option than the old family recipe.. 


And the fish is the perfect one for me.. 


Thank you mom and sister for cooking these food.. Happy Fiesta Cagayan de Oro City.. Thank you Thank you for the holiday-- a time to bond with family..

Salo-salo at the Office: Christening, Birthday & Death Anniversary

So it's another salo-salo in our office. It's one of those days when office mates have celebrated events and occasions in their lives and they want to extend it to us in school.

Sir Gerry brought his signature dishes, the Spicy Yellowfin Tuna and Balbacua that his mom cooks so well, as well as Indian sauce. We learned that Sir Gerry's dad passed away a year ago and it was his death anniversary. Maam Isabel brought Lechon Paksiw from a niece's son's christening. Maam May brought boiled Bananas and Sweet Potatoes with matching salted fish for a simple birthday celebration of a friend of hers.

Food Giving..

Last Saturday, our school principal celebrated her birthday. We weren't able to greet her then, so we gave her a belated birthday greeting today since there was no class yesterday, and gave her a yummy birthday cake from Red Ribbon.. We sang a few songs and took photos with her. 


We didn't anymore partake of the cake we gave her. A few hours later, Maam May's student arrived with a Special Biko which her mom cooked for their Pista sa Nayon. 


I swear the Biko was yummy.. I took the photo too late, it was almost gone, hehehehe... 


And here is what remains of the Jack Fruit brought by Maam Gloria.. I didn't know we had Jackfruit until I was told that they left some for me.. Gaah.. I was very busy today.. tsk tsk tsk..

Who's your Hero?

Because It's Another Holiday: No Class but what to cook for my heroes? My family is my hero, each one of them, from Tatay to Nanay, my sibllings, my Lili and the youngest, my niece Ira. My bff Joy is also my hero, as well as all my other friends who have been there for me in times of trouble, misery, sorrow and confusion. Heroes do not need to die in order to be celebrated. A simple thank you will make them know how you regard them, and how you see them.


Giving a token or cooking for them raises the bar. :-) To my heroes, what do you want to eat today??? hehehe
