St Mary's School Foundation Celebration Day 1

>> Saturday, September 6, 2014

The first day of the school's foundation celebration is usually opened with the program participated by the grade school department. So we went early to witness Lili's and River's group's dance number.

This happened in the morning. After their number, we usually roam around the grounds and see what events and stalls we could visit, and what goods and food items we can buy. Of course, during this time, we discovered SIONGA or Siopao na Panga ng Tuna, and bought a box before going home for lunch.

In the afternoon, we came back and played Bingo Socials.

Bingo Socials is fun and exciting, and every year, we almost always win, hehehe.. Almost :-)

This time is also a time that we declare cheat day as we splurge and enjoy fries, shakes, deep-fried goodies, and many others. The kids are allowed at this time to eat these foods.

During our "tambay", students from the high school department asked us if we want to sponsor a mangrove to help save the environment. We gladly did, because before they even came to us, Lili was already telling us to do so. The high school students who volunteered to bring the sign around have already caught my daughter's attention.

So we just sat as we watched other kids get caught and hand cuffed, imprisoned in the jail booth, and many others.

River was caught thrice and was hand cuffed with three different girls, who were older than him, while Lili kept hiding because she was actually sought after to be hand cuffed with a former classmate.

My sister dicovered a new favorite in Peanuts-- Pilipinut. The peanut pack she bought was truly worth the buy. I should have bought some more.

When we got home, during movie marathon, we enjoyed the peanut, and all I can think of was buying some more the next day.

Sionga: Siopao na Panga ng Tuna

Look at what we have discovered this morning. We went to SMS to watch the kids perform their dance number for the Dance Showdown by the Grade School Department. The morning was exciting as it was, and the school spirit seemed to be in everyone. Sweet and I, while waiting for the program to start, roamed around the campus to see what the kids will be enjoying, as much as look into new things for them to enjoy.

Lo and behold, something pink caught our attention. Sionga, short for Siopao na Panga ng Tuna was there waiving at us, inviting us to try.

We were about to buy but then the program started, so we had to go and see the kids perform, per grade level. When Lili and River were done, we immediately went back to the stall of Sionga: Siopao na Panga ng Tuna, bought one box which contains 6 yummy pieces.

Then I started asking questions about its origins, its flavors, and we were even handed the two kinds of sauces to use when eating the Sionga: Siopao na Panga ng Tuna.

Of course, my best taste goes to the one where there was no sauce added. I just love it plain. The sauces add variety of flavors and extra kick.

Today's Eats from Friends

>> Friday, September 5, 2014

This morning, Maam Grace and I ate this pie they call Bahug-bahug. It's actually Bread Pudding that has a red coloring. This pie is popular because it is cheap and filling. Maam Nitz  bought this from the canteen, and shared with us.

During lunch break, my friend and I met at PAGIBIG Fund and had lunch at Jollibee.

We felt so full so we decided to walk from Divisoria back to my school. But when we arrived there, a few minutes later, Sir Gerry shared with us these treats from his students' Pista sa Nayon activities.

It's non stop eats today. Thank you, Thank you , Thank you for the sponsors.

Gongyo & Breakfast

>> Thursday, September 4, 2014

Every morning, Lili and I do Gongyo. Lili, after breakfast and when she is ready for school. While I am just about to take breakfast. Before going to bed, we do Gongyo again.

Above are my usual offerings at my Butsudan. Of course, we eat the fruits when they ripen and gets replaced by a new batch of offerings. Whatever fruit in season will do.

I never run out of Lakatan Banana because it is one of the staple ingredients in my breakfast-- my protein shake.

This morning, while I had my shake, they had Baked Eggplant Caserole. That's eggplant, eggs, minced pork and some spices. They said it's yummy.

4th Year HS Confirmation Lunch

>> Monday, September 1, 2014

This morning, the 4th year high school students had their confirmation at the St. Augustine Cathedral. It is an annual activity to ensure that the Roman Catholics are confirmed before they graduate from high school.

Our department have been organizing and coordinating with the bishop in this endeavor, and this morning's activity was just one of the many confirmations that happened for years.

Despite the rain, the confirmation rites was attended by a thousand plus students. All of us are happy.

The confirmation rites ended almost lunch time, and so we proceeded to Philtown Hotel and Restaurant for our lunch. We had Kinilaw (picture above) and Pork Steak (below).

We also had their signature dish, the famous Philtown Restaurant Pansit.

We usually order their pansit for snacks or when someone would treat us in the department for some food. We also had Chopsuey, which was really good. I love the crunch of the vegetables and the sauce.

It reminds me of my ex-boyfriend as it is his favorite.. wink.. wink.. wink..

Of course, there was also Fish Fillet in Sweet & Sour Sauce.

Picture taking before eating..

Picture taking after eating.. hahaha..

Thank you for the sponsor of this lunch..

Cassava Pudding

The Cassava was boiled, and there were just too many of them. This, I mentioned in my previous post. If there are so many, we need to find a way to recreate them and make them more appealing to the people in the house.

So, from the boiled Cassava, we went to look for some recipes to tweak or remake..

We didn't find any, so we had to think of a recipe and came up with the simplest bread pudding recipe we have been making. Instead of the bread, we used the boiled Cassava.

To experiment, we used a few boiled stems, mashed them and mixed butter, condensed milk, cream and cheese.

And because it was just an experiment, we baked it in our oven toaster instead of the big oven. Baked it about 25 minutes, and this is the result..

It's flaky, crunchy and chewy on the inside. Yummy.. The texture is soft, but you could imagine a very soft textured Cassava cake. Because this is successful, we are going to make more from the remaining boiled Cassava stems..

Blessings From Our Mechanic's Farm and Today's Lunch

My father, after knowing that his mechanic had nowhere to go, offered our vacant lots in Balulang for him to stay, for his shop and for his family to temporarily live in. As the months progressed, they have made the vacant lot into a mini farm until it progressed and grew. Well, it is added income for them since he only has a few people to serve as mechanic. My father never asked for any rent from them, and although he never asks for a fee whenever my father would summon him for mechanic duties, my father still pays him. Even if he would refuse the payments, still, my father pays him because my father knows that their family needs it most.

With the said set up, years after, we enjoy being given the free fruits of their labor from the farm. We were told that the farm is what gives them blessings and from time to time, they share their blessings with us too.

Yesterday, my brother went there to bring wood. The wood that our carpenters used and no longer use here in Opol. There were too many of them that my father said the said wood can be used to make a house in the vacant lot. After all, there is still plenty of room for another house there. We were delighted to find that our mechanic and his wife sent us two free range chickens and some fruits and vegetables.

So today, we cooked them for lunch. We dressed the chicken, and were able to cook two dishes from them.  The first one is my experimental Eggplant Chicken Blood Stew, and the second one, Tinolang Manok Bisaya

The Eggplant Chicken Blood Stew utilized some of the eggplants as well as portions of the chicken. It was quite good really. I shall have a separate post for its recipe.

Tinolang Manok Bisaya utilized the beans, the Malunggay and most parts of the chicken. It was yummy. Also from the farm are huge Cassava.. Kamoteng Kahoy, as what we call them in Binisaya. My mom cleaned them already and we were thinking of what to cook them to, but we settled with boiling them, hahahaha..

We didn't cook rice anymore for lunch. Cassava is carbohydrates too. I love its golden yellow color. It is naturally sweet.

These two, they are not from the farm, but from my mom's suki. She bought the Malasugue the other day and it was frozen. The fried fish, Lipti, was bought earlier this morning, before they went to church.

Panfried Lipti (SweetLips Fish )

Kinilaw na Malasugue (Blue Marlin)

The said dishes make up today's lunch.. I hope my brother and sister are here to eat with us.. Happy meal indeed.. Thank you UNIVERSE for blessings...
